A tasty treat in all seasons, not just autumn!
3 cups pumpkin puree
.5 cup olive oil
1 cup white sugar
3 cups brown sugar
4.25 cups unbleached flour
1.5 teaspoon baking powder
1.5 teaspoon baking soda
1.5 teaspoon cinnamon (aids in digestion and blood circulation)
1.5 teaspoon nutmeg
1.5 teaspoon ground clove (said to be an aphrodisiac in China; what's not over there?)
.75 cups dried cranberries or raisins,
Preheat the oven to 350.
Mix all the dry ingredients in one big bowl.
Mix all the wet ingredients in a different bowl.
You guessed it, now combine the two tribes.
One 9” x 5” pan - cook for 45 minutes, check, and probably cook for another 10-15.
16 muffins - cook for 30 - 35 minutes.
The bread should spring back at you when you tap on it, not jiggly (is that a word?).
