Custom Stainless San Mai Gyuto

Stainless san mai gyuto with a 52100 high carbon core. It’s handled buffalo horn, abalone shell, ironwood burl and book ended with a stainless bolster and butt cap. The saya is poplar and features a solid carbon fiber pin with an abalone inlay.
