This extra large gyuto was commissioned by a previous customer. I moved the keyhole closer to the front of the bolster to reduce handle weight for a more nimble feel. The stainless damacus is made from about 56% AEB-L and 44% CPM154 in my Midnight Ripple pattern. This pattern in stainless damascus requires many arduous hours of preparation and forge welding and forging the stainless. The handle is a block of stabilized black and white ebony that the customer selected. The final specs of the gyuto: -275mm of edge length -65mm of heel height -378 grams
