Kurouchi Gyuto

$1,500.00

Kurouchi, meaning “black-forged,” are knives which retain the hammer-finish and black scale from the forging process. When exposed to extremely high temperatures and air, an oxidation layer is formed that is typically removed in the process of finishing a damascus steel or stock removal (monosteel) knife.

These knives are forged and hammered thin with a distal taper, which is then ground to it’s final, precise profile. A distal taper refers to the thickness of the blade at the handle, which gradually thins out at the tip for precision, performance and superior knife balance.

The remaining spine is minimally ground to preserve the forged aesthetic. The black, rugged detail is the retained scale, which offers some protective benefits that aid in maintaining your high-carbon knife for the years to come.

A kitchen knife rack full of kurouchi blades on display offers an authentic, yet minimilist aesthetic to a high-end kitchen, adding a vibe that is both understated and elevated.
