Stainless Steel Damascus "Gyuto" (Japanese-Style chef knife)

$3,000.00

NOTE: This is a made-to-order item.

牛刀

Literally translated as “Cow Sword,” the Gyuto is the all-purpose workhorse of kitchen cutlery, and a must-have kitchen tool. "From meats to beets,” a gyuto excels at meat and vegetables alike. Much thinner behind the edge than it’s heavier European counterparts, you will notice that this knife glides through food like onions or carrots with far less resistance. The blade profile lends itself to an easier glide-through (push or pull cut) for larger cuts of meat, and a sharper tip allows detail work like trimming meats or mincing vegetables.

Own a rare piece of kitchen art when you choose this item for yourself or a lucky recipient. Bladesmith Ian Rogers is among a handful of kitchen knife makers forge-welding his own stainless damascus steel in-house. For our customers, this combines the artisan custom knife experience with the practicality that stainless steel offers. This particular steel combination and method offers easy maintenance, all while knowing that the knife was made entirely by one craftsman.

Silky to the touch, the handle is made of a tastefully selected natural wood which is carefully hand-sanded to a fine-grit finish. The texture and tactile sensation of holding the knife is every bit as joyful as the experience of cutting through food with it.
